Gluten-Free Foods

I can handle not having bread; hell, I can handle going without birthday cake…but a life without pizza is just plain torture!  After much searching, I finally came across an amazing Gluten Free Pizza recipe that contains no sugar and no flour.  (From Happy2BeMe website)

Crust: 1/2 sweet potato
1/4 C oat bran (free grain)
Topping: 1/2 C spaghetti sauce (condiment)
4 oz diced onion, green pepper, mushrooms & 4 or 5 zucchini slices
1 oz Itallian blend cheese
Pam cooking spray

boil the sweet potato until done, drain, mix, add oat bran and mix again. Grease pizza pan or cookie sheet. Form dough into ball and pat down. Spray rolling pin with Pam and roll dough onto pan. Spread sauce, cheese and vegetables…spray a little Pam on the veggies so they don’t dry out…sprinkle some herbs on the zucchini to make it look like pepperoni. Bake at 400 for 25 minutes. I sprayed a little butter spray on the crust when it was done and added some garlic salt….good stuff!
