Sign up today! Bubble ‘N Squeak Patties… Makes 6 patties 1/2 cup Savoy cabbage, very finely shredded 1 heaping cup cold mashed potatoes 1/2 cup sharp Cheddar cheese, grated 1 tsp. Dijon mustard salt and pepper to taste 1 small egg, beaten flour, for coating sunflower oil, for frying Steam the cabbage for 3 minutes until just tender. Leave to cool and squeeze with your hands to remove as much water as possible. Mix the cabbage with the mashed potatoes, cheese and mustard - Then season to taste. Stir in egg and mix until combined. Divide the mixture into sixths and form each portion into a flat patty using floured hands to form. Coat each patty in flour and shake to remove any excess. Lightly coat the bottom of heavy-based frying pan with oil. Cook three patties at a time for 3-4 minutes each side until golden. Drain on paper towels until serving. Cabbage is a valuable source of antioxidant vitamins C, E and beta-carotene which have a protective effect on the brain. The cheese and egg both provide valuable brain-boosting protein. Add even more nutritional value by using whole-wheat flour.
